    • Sensations Onion skin colour. Pleasant effervescence with fine and persistent perlage. Complex, ample bouquet with notes of small red fruits and flowers. Complex, soft and enveloping taste, accompanied by excellent freshness.
    • Vinification The grapes are harvested by hand in 20 kg crates and stored at 10°C in cold storage for 12 hours. A short maceration in the press is carried out, to extract the typical onion skin colour, and the free-run must (45% yield) is fermented in steel at a controlled temperature. The base wine remains on the fine lees of fermentation until draught in the spring following the harvest. After at least 24 months on the lees, disgorgement is carried out with a dosage of 4 g/l.

      "Saignée della Rocca" Oltrepò Metodo Classico DOCG Extra Brut Rosé
    • A refined rosé from Oltrepò Pavese. It is proposed by Conte Vistarino, one of the territory's most historic realities. It is called Saignée della Rocca and is a Metodo Classico sparkling wine, 100% Pinot Noir, made with grapes from the estate's vineyards located between 200 and 400 metres above sea level, on clay-limestone soils. Vinification in pink, with a short maceration in the press, gives the wine its characteristic onion skin colour and lends elegance and complexity to the aromatic profile. For the rest, the production of Saignée della Rocca follows the Metodo Classico, with maturation on the lees for at least 24 months. After disgorging, the wine is dosed with approximately 7 grams per litre of sugar, thus acquiring a smooth and balanced taste. In the glass, this sparkling wine is enhanced by a fine and persistent perlage. On the nose, it captivates with its complex and broad bouquet, characterised by notes of small red fruits, such as raspberry and strawberry, and floral hints of rose and peony. In the mouth, it is complex, soft and enveloping, with a crisp freshness that balances the softness of the fruit. The typical minerality of the soil emerges with elegance, giving the wine a long and pleasant persistence. Saignée della Rocca is a versatile sparkling wine. It pairs well with a wide variety of Mediterranean dishes. Perfect as an aperitif, it is ideal with fish starters, cured meats and fresh cheeses. It is also an excellent companion for fish or white meat main courses.

      Conte Vistarino and Oltrepò Pavese are closely linked: founded in 1850, it was the first to produce Metodo Classico based on Pinot Noir. Even today, this noble grape variety is still the absolute protagonist of the winery.
