Scents of red fruits such as strawberries, raspberry and cherry emerge, accompanied by floral notes of rose and peony.   • Vinification The Cuvée Prestige Rosé comes from the separate vinification of Pinot Noir and Chardonnay grapes. All the grapes, hand-picked in small crates, are sorted and chilled. Each bunch is selected by expert eyes and hands, and then benefits from an exclusive 'berry spa'. A special system washes and whirlpools the bunches, using three soaking tubs and a drying tunnel. The Pinot Noir grapes, once transported over the vat, are separated from the stems and the berries fall in, from above, by gravity. Maceration 'in pink' is carried out for 24-36 hours: just a few hours to 'seize the moment', that is, to obtain that particular and delicate shade of pink that distinguishes Franciacorta Rosé in the bottle. Then the must, separated from the skins, ferments in small barrels and steel vats at a controlled temperature. The Chardonnay grapes are vinified in the traditional way, with pressing of the whole bunches. The best fractions of must ferment in vats, separately. After 7 months of ageing, the 'magic rite' of creating the cuvée is performed by blending the Pinot Noir and Chardonnay wines. The cuvée thus obtained is bottled and matured on the lees in underground cellars, at a constant temperature of 12°C, for an average period of 30 months. Dégorgement takes place in the absence of oxygen, using a unique system, invented and patented by Ca' del Bosco. This avoids oxidative shocks, further additions of sulphites and makes our Franciacorta wines purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked to guarantee traceability.
