  • Sensations COLOUR: Bright pink with brilliant reflections with a very fine perlage and a soft, persistent mousse. BOUQUET: A fragrant bouquet that opens with pleasant citrus notes such as mandarin and characteristic hints of small red fruits, from raspberry and currant to wild strawberries. The finish is elegant and reminiscent of bread crust. FLAVOUR: in the mouth, it is decisive, fresh and with excellent sapidity with sensations on the finish that echo the bouquet. SERVING SUGGESTIONS: Its balance and fragrance make it ideal as an aperitif. It goes well with fine cured meats and light dishes such as risottos and vegetable soups. Excellent with shellfish and fish crudités.
  • Vinification The grapes are harvested by hand in small 16 kg crates and are destemmed and left to macerate for 6-8 hours, allowing a slight extraction of colour from the skins. After soft pressing of the whole grapes, with 50% extraction of the free-run juice, static decantation takes place for 12 hours at 16°C. Alcoholic fermentation takes place for about 12 days at 18°C. At the end of this period, the wine matures in steel vats until the July following the harvest. The second fermentation and surlie refinement in the bottle continue for at least 36 months, followed by 2 months after disgorgement.
