    • Contadi Castaldi's Franciacorta DOCG Pinònero Natura is an atypical wine, produced from 100% Pinot Noir grapes. A wine that stands out for its freshness, minerality and complexity. The grapes, in this case, come from different areas of Franciacorta. This blend of grapes gives the wine a unique complexity and richness of aromas. The grapes are harvested by hand and softly pressed. The must decants statically under cold conditions and then ferments in stainless steel with selected yeasts. Malolactic fermentation is carried out partially. The wine then matures for 7 months in stainless steel and barriques, and is then bottled and left to rest on the yeasts for approximately 60 months. After disgorgement, it matures for a further 6 months in the bottle. Pinònero Natura has a straw yellow colour with slightly orange reflections. The perlage is fine and persistent. The nose opens with a broad and complex bouquet, with notes of citrus fruits, pink grapefruit, wild strawberry, white flowers, lime, acacia honey and green oregano. The palate is crisp, fruity and fresh, with notes of citrus fruit and a lingering minerality. It goes well with fish dishes, shellfish and fresh cheeses.       Founded in 1991, Contadi Castaldi is one of the best-loved wineries in Franciacorta. One of those wineries that, thanks to the quality of its wines and a more than enviable consistency of production, has over the years become a real point of reference for enthusiasts and experts alike. The company belongs, together with Bellavista, to the Moretti group. It was originally an old furnace that the visionary entrepreneur reconverted into a sparkling wine house. Its large spaces and long galleries, once used for firing bricks, in fact, proved perfect for ageing sparkling wines. One of the first wineries in Franciacorta to have developed the concept of Satèn, Contadi Castaldi offers a range of wines characterised by great elegance and distinct recognisability. The company currently has around 18 hectares of its own vineyards and is able to directly follow the entire sparkling wine production cycle, from the production of the base wines to the elaboration of the wines that must rest for several months on the lees in the cellar.
