    • Sensations COLOUR: pale straw yellow, typical of Pinot Noir, embellished by a soft mousse and a very fine, continuous and persistent perlage. BOUQUET: broad, reminiscent of bread crust, with both mineral and floral perceptions of wisteria and elderflower. The fruity notes are typical of the black grape variety from which it originates: small red fruits, including currant and raspberry with a pleasant hint of citrus. FLAVOUR: In the mouth, it is decisive, fresh and with excellent sapidity with sensations on the finish that echo the bouquet. SERVING SUGGESTIONS: An excellent aperitif, it goes well with fine cured meats and hors d'oeuvre. Because of its structure, it can be paired with the whole meal, with risottos and delicate pastas, seafood dishes and sushi.
    • Vinification The grapes are harvested by hand in small 16 kg crates. Soft pressing of the whole grapes with an extraction of 45% of must flower is followed by static decantation for 12 hours at 16 °C. Alcoholic fermentation takes place for about 12 days at 18 °C. At the end of this period, the wine matures in steel vats until the July following the harvest. Second fermentation and surlie ageing in the bottle last for at least 30 months, followed by 2 months after disgorging.

    • Oltrenero Brut. 100% Pinot Noir. This is an Oltrepò pavese DOCG, a classic method produced in the province of Pavia by the Zonin family. The grapes are harvested by hand in 16 kg crates. We start with the soft pressing of the whole grapes to extract the first-pressing must, which is decanted and then sent to alcoholic fermentation. This produces the base that is left in steel tanks for a few months before bottling and second fermentation. Maturation of 30 months in contact with its own yeasts, followed by a further 2 months' rest in the cellar after disgorging, is required before the wine can be considered ready to go to market. A pale straw yellow, this sparkling wine reveals a soft mousse and a particularly fine, continuous and persistent perlage. The nose reveals a broad bouquet, with hints of bread crust, mineral and floral perceptions of wisteria and elderflower. In the mouth, it is firm and fresh, with excellent flavour and a perfect nose/palate correspondence. Excellent as an aperitif, it accompanies cured meats, risottos and seafood first courses.
