Ca' del Bosco's Cuvée Prestige Rosé comes from the separate vinification of 80 per cent Pinot Noir and 20 per cent Chardonnay grapes. All grapes are hand-picked in small crates, graded and chilled. Each bunch is selected by expert eyes and hands, and then benefits from the special bunch washing system developed by the Franciacorta winery. The Pinot Noir grapes, once transported over the vat, are separated from the stalks and the berries are dropped into them by gravity. Thus begins the 'pink' maceration phase lasting 24-36 hours, to obtain that particular shade of colour that distinguishes this Franciacorta DOCG. Then the must, separated from the skins, ferments in small barrels and steel vats at a controlled temperature. The Chardonnay grapes, on the other hand, are vinified in the traditional way, with pressing of the whole bunches and only the best fractions of must are then fermented in vats. After 7 months of ageing, the cuvée is created by blending the Pinot Noir and Chardonnay wines. This is bottled and matured on the lees, at a constant temperature of 12°C, for an average period of 30 months. Dégorgement takes place in the absence of oxygen, using a unique system, invented and patented by Ca' del Bosco. This avoids oxidative shocks, further additions of sulphites and makes its Franciacorta wines purer, and more long-lived. Cuvée Prestige Rosé Edition 46 is distinguished by its salmon-pink colour, delicate yet brilliant, with golden reflections and a fine, elegant effervescence. The nose reveals a rich and seductive bouquet, with aromas of red fruits such as strawberries, raspberry and cherry, accompanied by floral notes of rose and peony. This is followed by nuances of citrus fruits and a light roastiness that provides intriguing complexity. In the mouth, it is fresh and lively. The acidity is well balanced and contributes to a pleasant and refreshing drink. Ripe red fruit flavours intertwine with notes of bread crust and a hint of spice, ensuring a long and pleasantly persistent finish that leaves an elegant and harmonious memory.
