    CHARACTERISTICS
    • TypeVino spumante
    • Location Trentino
    • Grapes Cuvée Pinot Nero e Chardonnay
    • Sensations Soft pink colour with light copper highlights, creamy white mousse, continuous fine perlage. Complex aromas with notes of ripe cherry, blackberry and red apple. The flavour is full, enveloping, with great balance and persistence.
    • Vinification The Chardonnay, harvested by hand in boxes, is gently pressed by separating the different fractions of must that ferment in stainless steel. The Pinot Noir is obtained using the "submerged cap" system, separating the must from the skins at the first signs of the start of fermentation, which continues in stainless steel at a controlled temperature. In this way we are able to obtain a soft rosé colour that characterises our Trentodoc rosé. Foaming takes place the following spring and the wine remains on the lees for at least 36 months before disgorging.

      Altemasi TrentoDoc Rosé Riserva 2017
    • The label reads TrentoDOC, a sign that we are in the presence of a bottle of quality Metodo Classico from one of the most vocated areas for the production of bubbles in Italy. Specifically, this is a Rosé Riserva, obtained from the processing of Chardonnay and Pinot Noir grapes. It is offered by Altemasi, a brand owned by the CAVIT winery, a further guarantee of quality. The grapes come from vineyards located between 450 and 600 metres above sea level, on the Brentonico Plateau and in the Cembra Valley, on soils of ancient glacial origin. The bases, processed strictly in steel, are bottled and then undergo a slow refinement of over 36 months. The result is a sparkling wine characterised by a pink colour with slight auburn reflections. As soon as it is poured, it is covered with a creamy white froth, well supported by a continuous, fine perlage. The aromas are complex, with notes of ripe cherry, blackberry and red apple. In the mouth, however, it reveals itself to be a wine characterised by a full, enveloping flavour with great balance and persistence. Suitable as an aperitif, on the table it accompanies soups and main courses, including white meats.

Cavit means Trentino. One of the most important cooperatives in the area, it churns out something like 70 million bottles a year. Contrary to common feeling, such a high number is not synonymous with industrial quality. Each bottle retains personality and wide-ranging aromatic suggestions. Cavit was born in the 1950s, out of the commitment of a few producers eager to relaunch the fruits of a region that holds oenological marvels. The Consorzio delle Cantine Sociali (as it was called in the early years) grew from season to season, until today it has become one of the reference points of not only local, but Italian wine production. Based in a beautiful 16th century building in Maso Toresella (TN), today Cavit continues to enchant with wines of absolute charm, perfect for those seeking quality and inspiration in every glass.
