It evolves in the glass, revealing vegetal and marine touches with a fresh almond finish. Striking on the palate is the contrast between the creaminess and balance of the perlage and the "shuddering" freshness, and the finish is savoury and balsamic.

      Franciacorta DOCG "Coupé" Brut Nature
    • For lovers of quality bubbles, in particular the good metodo classico produced in Lombardy's Franciacorta region, this bottle is simply a 'must'. It is offered by Monte Rossa, a family business that has been offering quality wines with a recognisable character for almost half a century. Specifically, it is Franciacorta DOCG 'Coupé', a Brut Nature, produced from a large majority of Chardonnay, almost 95%, to which is added a small percentage of Pinot Noir. The grapes come from 15 crus, spread over the 70 hectares of vineyards in the Franciacorta region. The base Cuvée is made up of around 87% wines from the last vintage and 13% reserve wines. After harvesting, which is done manually in boxes, the grapes are taken to the cellar for soft pressing, with selection of the best part of the bunches, with an overall yield of no more than 55%. Each cru is vinified in purity. Then the bases are partly refined in steel vats and partly in oak barrels. After creation of the cuvée and bottling, the wine rests in the bottle for more than 24 months. Straw yellow, luminous and with lime peel reflections, the Coupé reveals a suave bouquet on the nose, with hints of elderflower and white peach. In the glass it is constantly evolving, with vegetal and marine touches that with time lead back to notes of fresh almonds. In the mouth, the contrast between the creaminess and balance of the perlage is surprising. The finish is savoury and balsamic. The perfect aperitif, this non-dosed Franciacorta DOCG is also ideal with cured meats and cheeses, but especially with sushi, sashimi and seafood.

      A historic winery in Franciacorta, at Monte Rossa the farming tradition has merged harmoniously with technology. Here, craftsmanship and research are managed with commitment and an uncompromising entrepreneurial mentality. Its history began in 1972, when entrepreneur Paolo Rabotti, with the support of his wife Paola, embarked on the road to viticulture. Today it is his son Emanuele who enthusiastically carries on that project. Among the first in Franciacorta to abandon the production of still wines, at Monte Rossa they have always invested in technology, continuing to experiment in the cellar. Today, the company can count on a vineyard of around 70 hectares, divided into numerous crus, on different soils and with different exposures, which contribute to broadening the aromatic heritage of the grapes, to compose cuvées rich in structure and complexity. Annual production is around 500 thousand bottles. All to be savoured.
