A bubble that amazes. It is proposed by Conte Vistarino, one of the historic companies of the hills 'beyond the Po Valley'. It is called Cépage Brut and is a Metodo Classico sparkling wine, elegant and refined, produced with grapes from vineyards located between 200 and 400 metres above sea level, on clayey-calcareous soils. The temperate climate of the area, with cold winters and long hot summers, favours optimal ripening of the grapes, guaranteeing a perfect balance between freshness and complexity. Cépage Brut is a blend of Pinot Noir (80%) and Chardonnay (20%), two noble grape varieties that complement each other, giving the wine a refined character. The Pinot Noir brings structure, elegance and fruity notes, while the Chardonnay gives freshness, finesse and floral aromas. The grapes are harvested by hand in 20 kg crates and immediately refrigerated to preserve their freshness. Pressing is soft and only the best juice of the grapes, the so-called 'must flower', is extracted. This is fermented in steel at a controlled temperature to create a base that remains on the fine lees until draught. After bottling, the wine rests on the lees for at least 30 months, developing complexity and harmony. This is followed by disgorgement and a moderate dosage of 7 grams per litre of sugar, giving the wine a smooth and balanced taste. Brilliant straw yellow in colour, enhanced by a fine and persistent perlage, the nose reveals an elegant and ample bouquet, characterised by floral freshness and balsamic notes. Cépage Brut pairs well with fish hors d'oeuvres, cured meats and fresh cheeses. Also perfect as an aperitif. It goes well with light first courses, such as risottos and pasta dishes based on fish or vegetables. It is also an excellent companion for main courses of white fish or white meat.
