The bubbly you don't expect, from the heart of the Marche hills. Here, between tradition and innovation, is born the Passerina Brut Millesimato Tarà. Tenuta Cocci Grifoni proposes it. A tribute to the Martinotti Method, a celebration of the Italian history of bubbles. It comes from vineyards located in the beautiful hills of the Marche region, at an altitude between 230 and 250 metres above sea level. Passerina, an ancient and versatile grape variety, is prized for its freshness, balanced acidity and rich aromatic profile. These characteristics make it a particularly suitable grape variety for the production of refreshing bubbles. Harvested by hand in the second ten days of September, vinification takes place in temperature-controlled stainless steel tanks, preserving the fresh, fruity aromas of the variety intact. This is followed by fermentation in an autoclave and subsequent ageing for 3 months in contact with the fine lees. Tarà offers an explosive bouquet. On the nose, floral notes of wild flowers clearly emerge, followed by fresh hints of cedar and summer fruits such as peaches and crisp white cherries. In the mouth, the perlage is subtle and persistent. The sip is delicate and characterised by an imperceptible sweetness that enhances the freshness and salinity typical of the variety. Best enjoyed young, to best appreciate its freshness and liveliness, this sparkling wine is perfect with aperitifs and light appetisers. Excellent with fish carpaccio and seafood salads.
We are located in the rolling hills of the Marche, where the Adriatic Sea meets the Sibillini Mountains. This is where Tenuta Cocci Grifoni, a winery founded in the 1930s by Guido Cocci Grifoni, is located. A far-sighted pioneer, Guido laid the first vines in what we now know to be an area with a vocation for viticulture, laying the foundations of a reality that still belongs to his family almost a century later. Today, the vineyards extend over about 60 hectares of the company's total 100 hectares, surrounded by centuries-old woods and olive groves. This unspoilt landscape, characterised by a Mediterranean climate with mountain influences, gives the grapes unique characteristics that translate into wines of great value. Between the rows, both native and international varieties are grown. In particular, Pecorino, Montepulciano and Passerina, which best express the character of the territory. Then Chardonnay, Merlot and Cabernet Sauvignon that, despite their French origin, adapt perfectly here in the Marche region to produce very interesting wines. From the very beginning, Tenuta Cocci Grifoni has made sustainability one of its founding values. Today, the company is SQNPI certified (Sistema Qualità Nazionale Produzione Integrata - National Quality System for Integrated Production) and adheres to environmentally friendly farming practices, such as integrated pest management and the use of only organic fertilisers. In addition, 30% of the farm's surface area is used as woodland, to better protect biodiversity.
