Fragrant hints of yeast and patisseries. The palate is dry and fragrant, very well balanced. Overall, it is a harmonious and full wine.
    • Vinification Harvesting takes place in the two weeks of September. Manual harvesting of the bunches. The grapes are gently pressed and vinified in steel wine vats at around 15°C. At the end of fermentation, maturation continues on the yeasts. Foaming and maturation on the lees: in the spring following the harvest, the base wine re-ferments in the bottle at a temperature of 12°C for approximately 30 days. Once the fermentation is complete, the bottles are left to mature on the lees, lying on their side for at least 12 months. The clarification of the wine takes place with the so-called 'remuage'. at the end of which disgorgement and then dosage are carried out.

    • Excellent and sophisticated, Casal Thaulero's sparkling wine Metodo Classico Extra Brut is made from 100 per cent Pecorino grapes, an indigenous variety from central Italy. The bunches are harvested by hand in the first two weeks of September, ensuring maximum quality and optimal ripeness. The result of a long re-fermentation in the bottle, the sparkling wine matures on the lees for at least 12 months. The colour is an intense and brilliant straw yellow, enriched by a fine and persistent perlage that enhances its elegance. On the nose, there are intense and persistent aromas of yellow fruit, balsamic notes and dried fruit, especially hazelnut. Fragrant hints of yeast and pastries add further olfactory nuances, making it complex and intriguing. In the mouth, the Metodo Classico Extra Brut sparkling wine is dry and fragrant, with a remarkable balance between acidity and savouriness. An excellent companion for various occasions and gastronomic pairings. Ideal as an aperitif or in combination with fish dishes, shellfish, white meats and fresh cheeses.

      Casal Thaulero represents a symbol of oenological excellence and long tradition, capable of conveying the history and beauty of Abruzzo through its wines. The winery boasts an ancient and fascinating history. Its name, for example, comes from the locality of Casal Thaulero, situated between the hills of Abruzzo and the Adriatic Sea. It was here that the Thaulero family, of military origin and from Hamburg, lived. They settled in Abruzzi in the 16th century and received a direct mandate from Charles V to oversee the area and, thanks to the work of Giovanni Thaulero, became the forerunners of viticulture in Abruzzi. Giovanni, in fact, wrote numerous treatises on viticulture and experimented with avant-garde agricultural techniques, planting modern vines and restoring his estates. This passion inspired a number of vine growers to unite and, in 1961, a cooperative winery was born, with the aim of producing and exporting Abruzzi wines to the world. Casal Thaulero was the first Abruzzi cooperative to bottle and export DOC wines to NAFTA countries, back in 1968. Since 2005, the winery has moved to new premises in the city of Ortona. Here, the winemaking tradition of Abruzzo continues to be cultivated with the same passion and commitment as always.
