Colosi amazes lovers of simple and immediate bubbles with this Bolentino, a quality wine produced from a selection of the best Grillo grapes harvested in its own vineyards in the Marsala area, near Trapani. From this ancient and prized grape, the Sicilian winery obtains a sparkling wine characterised by a fine perlage and a particular aromaticity. But let us proceed in order. The grapes are harvested during the second decade of September and pressed quickly to keep the rich aromatic heritage intact. The resulting sparkling wine base is then sparkling in an autoclave, according to the traditional Charmat method. The re-fermentation takes place at a controlled temperature and continues for at least 6 months, during which the wine remains in contact with its yeasts. The result is a wine characterised by a beautiful straw-yellow colour and an inviting bouquet of aromas, with recognisable notes of white flowers and bread crust. In the mouth, it is the distinct minerality that makes the difference. Freshness and savouriness, on the other hand, make this sparkling wine made in Sicily ideal for accompanying fatty foods, such as sliced meats and cheeses, but also fried fish and shellfish.
For more than 40 years, the Colosi family has been cultivating vineyards in suggestive terraces on the sea of Salina, the small island of the Aeolian archipelago, a land highly suited to the cultivation of vines. 10 hectares between Capo Faro and Porri, an area considered among the best, both for exposure and the nature of the soil. Vineyards on old terraces, obtained by restoring old dry-stone walls, where the island's typical varieties are grown, from Corinto Nero, Nerello Cappuccio, Nerello Mascalese, Inzolia, to Catarratto and Malvasia. The latter, in particular, represents the main grape variety in the entire wine production of the area and of the Colosi company. Moreover, the production focuses only on indigenous varieties, from the archipelago but also from the Sicilian territory, thanks to 20-year collaboration contracts with selected Sicilian producers.
