The production area is that of Nervesa della Battaglia, in the province of Treviso. Here the Fiorotto winery offers its Florimonte Prosecco DOC in the Brut version. A dry but not overly dry sparkling wine that makes versatility one of its strong points. But let us proceed in order. 85% Glera, 15% Pinot Grigio, this sparkling wine is the result of careful selection of the best grapes in the vineyard. Harvesting is done by hand and begins in September, when the grapes have reached full ripeness. Once in the cellar, the bunches are subjected to soft pressing. The must obtained undergoes static decantation, before beginning its fermentation phase, in temperature-controlled stainless steel, with selected yeasts. The process lasts about 3 months and then the base wine is sent to an autoclave for the delicate sparkling phase using the Charmat, or Martinotti, method. Finally, the finished wine undergoes further bottle ageing for a period of 30 to 90 days. Light straw yellow, the nose reveals a fresh and delicate bouquet, with notes of green apple, bergamot and white flowers. In the mouth it is dry, with clear mineral hints. Persistent and with a pleasant tendency to dryness. Good today, this Prosecco DOC should preferably be drunk within 18 months. It is perfect as an aperitif but can also be served throughout a meal. Mainly recommended with white meats and fish. It goes well with fried fish and shellfish.
