There is Prosecco and there are the 'Rive', the highest point, the qualitative summit of the Prosecco Superiore DOCG denomination. And it is precisely from the Rive of San Pietro di Barbozza that this sparkling wine originates. Impervious hills, where the vine is often older. The term Rive identifies all this. Small 'heroic' vineyards, on steep and particularly steep terrain, where cultivation is particularly demanding. But the quality obtained fears no comparison. As in the case of this sparkling wine, vintage and Extra Brut, produced in a limited edition of only 17,852 bottles. The vineyards are located between 350 and 400 metres above sea level. 100% Glera, the grapes harvested at perfect aromatic ripeness are pressed and processed in temperature-controlled steel tanks. The subsequent sparkling process, according to the Charmat Method, lasts at least 6 months and the wine is then left to mature further in the bottle. Brilliant straw yellow, with greenish reflections, in the glass it reveals an unusually fine perlage. On the nose, rich floral and slightly citrus scents. In the mouth, however, one discovers a wine characterised by a decidedly dry and austere, typically savoury taste. The aftertaste is mineral, while the particularly long finish ensures a long and pleasant persistence. Ideal with delicate hors d'oeuvres, e.g. raw fish, it has sufficient substance to accompany fatty fish dishes. Perfect with salmon.
The history of Valdo is closely linked to that of the Bolla family, made up of passion and entrepreneurial spirit. A story that coincides to a large extent with that of the evolution of Prosecco and the development of the splendid territory where it is produced. It all started from an intuition of Abele, grandfather of Valdo's founder, Sergio Bolla. It was the year 1883 and Abele, then owner of an inn, which still exists in Soave, decided to start producing still wines to supply the best establishments in Venice and Milan. Success was so great that in 1926 a group of enterprising entrepreneurs from Valdobbiadene decided to join forces, creating the 'Società Anonima Vini Superiori', a company mainly dedicated to the sparkling of Valdobbiadene Prosecco Superiore and Cartizze. In 1938, Sergio Bolla, son of Albano, acquired the Società Anonima Vini Superiori, which thus became the property of the Bolla family. From then on, the history is studded with success and satisfaction. In 1941, the company changed its name to Valdo. In 2002, the new production centre was inaugurated, and shortly afterwards the company expanded outside Italy, setting up two sister companies, one in Germany and one in the United States. Today Valdo is a colossus, in the best sense of the word. A company capable of producing excellent wines, taking the good name of Made in Italy all over the world.
