    • Sensations Colour: brilliant gold with green reflections, the perlage is minute, tight and persistent. Nose: fine and complex, it expresses itself with floral hints of white-fleshed fruit, bread crust and hazelnut butter that give an enveloping nose and a broad, complex bouquet.     • Vinification After manual harvesting, we carry out further sorting in the cellar to select only the best grapes, which is followed by very soft pressing. The free-run juice undergoes static clarification, followed by alcoholic fermentation at a controlled temperature (13-14°C) in stainless steel tanks. Secondary fermentation takes place in the bottle according to the Metodo Classico for approximately 80 days in the cool underground cellars of Colombo, followed by a period of at least 30 months on the lees. Traditional remuage on pupitres and dégorgement à la glace. An ideal period of bottle ageing follows

      Alta Langa DOCG Blanc de Blancs 2021
    • Alta Langa DOCG, this Metodo Classico Blanc de blancs proposed by Colombo is a wine characterised by great balance and excellent persistence. It is produced solely from Chardonnay grapes from vineyards cultivated in the high hills. Selected already in the vineyard, the grapes are harvested by hand in small crates and undergo a very soft pressing. The free-run must undergoes static clarification, followed by alcoholic fermentation in stainless steel tanks. Foaming takes place according to the Metodo Classico. After the first 80 days, in the cool Colombo cellars, the wine remains in contact with the yeasts for a minimum of 30 months, acquiring complexity and structure. In the glass it has a beautiful bright gold colour with green reflections. The perlage is fine and persistent, and conveys fine and complex aromas on the nose. Hints of flowers and white-fleshed fruit. Then bread crust and hazelnut butter that give an enveloping nose and a broad and complex bouquet. In the mouth, finally, the wine reveals itself to be elegant, with great balance and excellent persistence.
