Lovers of delicate, fine wines, step up to the plate. This 1701 Franciacorta DOCG Satén Vintage is just the thing for you. We are talking about a Blanc de Blancs, a white sparkling wine, made from white grapes. Chardonnay, in this case, which comes from grapes processed in an artisanal way, without the use of fertilizers or chemical treatments. It is a Biodynamic product, qualitatively perfect, sustainable for the environment and healthy for those who drink it. Harvested by hand, and carefully selected bunches, each parcel is vinified separately and blended only later. The first phase of fermentation takes place in stainless steel, while the so-called "frothing" and bottle-ageing phases take 30 months. Straw yellow in colour, this Satén has a particularly fine and delicate perlage, as is typical for the type. The nose reveals scents of almond, biscuit, bread crust and yellow fruit that is still crunchy. In the mouth it is rich, creamy and elegant. Fresh and satisfying thanks to its delicate mineral notes. Proposed in the Brut version, therefore pleasantly dry, it is the ideal wine for those who want just one bottle from starter to main course. Perfect with fish hors d'oeuvres, it also goes well with white meats and shrimp or vegetable tempura.
Eleven - magnificent - hectares. One of the oldest wine-growing estates in the area. Three hundred years of history and an extraordinary four-hectare vineyard enclosed by 11th-century walls. All this is 1701, the first winery to be entirely converted to biodynamics in Franciacorta. The winery is run by Federico and Silvia Stefini, siblings and partners, who produce their wines, especially sparkling but also still, following the strict protocols of clean agriculture that respects the land. Modern techniques, but inspired by a production philosophy linked to the most virtuous traditions. Only biodynamic preparations are used in the vineyard and every process, from the simplest to the most complex, is carried out scrupulously following the different phases of the moon. Synthetic chemicals are banned in the vineyard and in the cellar. The grapes, rigorously hand-picked, ferment according to the rhythms of nature, thanks to "pied de cuve" created with native yeasts. And the wines' bottle-ageing always goes well beyond the minimum prescribed by the DOCG's strict production regulations. The result of all this attention is amply rewarded from the very first taste.
