In this case, the producer, Altemasi, is part of the large CAVIT cooperative, one of the largest in the Trentino region, capable every year of churning out millions of bottles of unmistakable style and impeccable quality. Specifically, the grapes come from the steep gravel slopes of the Cembra Valley and the Trento hillside. Maturation on the lees for more than 36 months results in a sparkling wine characterised by a beautiful, persistent mousse, well supported by a fine, continuous perlage. The colour is straw yellow, with golden reflections, while the bouquet is complex and intense, with fruity notes of peach blending with sweet hints of almond and white chocolate. In the mouth, however, it is enveloping, with remarkable balance and great persistence. In the finish, there is an aftertaste of candied citrus peel and redcurrants. A bubble with an exquisitely gastronomic character, it lends itself to more than a few pairings. Excellent, for example, with classic smoked trout and shellfish. Thanks to its good body, however, it also lends itself well to accompany savoury, mouth-watering dishes such as vitello tonnato.
