We are talking about Neboise, born as an experiment from the imagination of the oenologists at the San Silvesto winery and soon to become a great success. Not a simple 'Nebbiolo vinified in rosé'. But a bubbly of great class made with Metodo Classico and 24 months of ageing on the lees. It is only at the end of this long period of rest in contact with the yeasts that Piedmont's princely vine reveals its most intimate and refined aspects. Neboise presents itself in the glass with a beautiful, lively pink colour and a fine, persistent perlage. The nose has very elegant, light aromas of cherry, rose and violet. In the mouth, it is fresh and pleasant. Perfectly balanced, full-bodied and surprisingly persistent. An unforgettable aperitif, it is simply excellent with shellfish and seafood.
