The Durin family's project to produce a Metodo Classico from indigenous vines began a long time ago. And after years of study it culminated in the production of a first local metodo classico, matured within the caves of Toirano, in the province of Savona. These wind tortuous and suggestive in one of the most beautiful corners of Liguria and represent 'the perfect wine cellar'. 'Bàsura', on the other hand, is the witch that gives its name to one of the most evocative rooms, a short distance from the remains of the cave bear and the evidence of prehistoric man who lived 12,000 years ago. Bàsura Rosa, in particular, is a Classic Method Brut Pas Dosé, produced with partially white vinification and brief skin contact of Rossese (about 50%) and Granaccia (about 50%) grapes from the company's vineyards in the Arroscia Valley. The wine matures on the lees for a minimum of 24 months inside the caves, at a naturally constant temperature of 15 degrees and 90 per cent humidity, in the dark, without noise or vibrations. The result is a sparkling wine with a fine, soft and persistent perlage, characterised by a beautiful, intense onion skin pink colour. The nose is fine, broad and elegant, with a pleasant note of rose and hints of currant. Then strawberry, cherry and slight mineral hints. In the mouth it is fresh, balanced, savoury, full and persistent. A wine with an excellent structure, it is ideal throughout the meal. It goes well with especially tasty dishes, grilled meats and fresh cheeses. Also excellent as an aperitif.
Durin is a small family-run farm with a long history. It is located in Ortovero, in the province of Savona and was founded in 1978 by Antonio Basso, the third generation of winegrowers in his family. The company's first vineyards date back to the 1920s and today extend over 17 hectares, mostly terraced, in the Arroscia Valley. The main indigenous varieties of western Liguria are grown here, thanks to a very special microclimate, influenced by the hills and the sea just 7 kilometres away.
