A bubble of great pleasantness, coming from an area of rare beauty. We are talking about the Pas Dosé, Metodo Classico, proposed here by Lonati Winery. Vintage, this wine is produced from 80% Chardonnay and 20% Pinot Noir. Grapes come from the estate's vineyards in Castel Boglione, in the province of Asti. We are located at approximately 310 metres above sea level, in optimal positions to reach full ripeness. After harvesting, which is done manually, the grapes are taken to the cellar where they are transformed into must. This in turn is transferred into steel tanks, and a small part into barrels, for alcoholic fermentation at a controlled temperature. The resulting wine is then bottled, where the second fermentation takes place for approximately 24 months. At that point, the wine is ready for remuage and dégorgement. In the glass it reveals beautiful golden hues, with chains of bubbles rising rapidly to the surface. The nose reveals intense and dynamic aromas, bread crust with marked notes of dried fruit, honey, almonds and lime blossom. On the palate, however, it is a delicate wine in perfect harmony with the right acid balance, pleasantly mineral, full-bodied and structured. Perfect as an aperitif, it is the right wine to uncork at a lunch or dinner where the menu is all about fish.
We are in Castiglione Tinella, in the province of Cuneo. Here, surrounded by kilometres and kilometres of vineyards, is the Lonati Winery estate called Rocca delle Langhe, purchased and renovated in 2003. Once the renovation was finished, a path of grape production for wholesale to large companies in the area began. But after a short time, thanks to the high quality of the raw material, the decision was taken to start the vinification of Moscato d'Asti DOCG, from vineyards in the so-called 'sorì eroici'. Since 2020, Marco Lonati, the last representative of the family, after graduating in Agricultural Science and Technology from Milan, has been personally involved in running the company, with the help of his partner Viviana. Today, Lonati Winery has also acquired land in Treiso, beginning the cultivation of red wines such as Barbera, Nebbiolo and Barbaresco di Meruzzano. Recently they have also expanded to Ca' du Lich, another renowned area of Castiglione Tinella.
