Alta Langa DOCG Extra Brut from Belcolle is a classic method sparkling wine from a historic vineyard planted in the early 1990s. Pinot Noir (90%) and Chardonnay (10%) grapes from heterogeneous clones and rootstocks give the wine complexity and uniqueness. The grapes are crushed without pressing, and only the first fraction of the must, the flower, is used to make the wine. Alcoholic fermentation takes place partly in steel and partly in new French oak tonneaux, giving the wine structure and softness. After blending, the wine then matures in the bottle for at least 36 months, developing a fine and persistent perlage. The low final dosage means that it is labelled as Extra Brut. In the glass it has a beautiful straw-yellow colour with golden reflections. The bouquet is intense and complex, with floral and fruity notes of hawthorn, broom, green apple and citrus fruits. On the palate, the wine is crisp, vertical, elegant and powerful, with a freshness and minerality that balance perfectly with its structure. An extremely versatile bubble, it goes well with shellfish, molluscs and white meats.

The parcelling out of the vineyards makes it possible to obtain labels that are increasingly representative of the link between the Langhe and its wines. Today, the winery can count on 10 hectares of vineyards between Verduno, the hills of the Langhe and the Asti region, which includes some of the most prestigious crus.
