Pentaris, Piedmont DOC, Metodo Classico Millesimato, is one of the sparkling wines proposed to the Colombo winery, thanks to the collaboration of oenologist Riccardo Cotarella. It comes from a blend of 50% Pinot Noir and 50% Chardonnay grapes. These grapes are selected in the vineyard, hand-picked in small crates and come exclusively from the vineyards cultivated in Bubbio, in the province of Asti, in the high hills over 250 metres above sea level. After harvesting, the grapes are taken to the cellar to be subjected to a very soft pressing. The best must undergoes static clarification, followed by alcoholic fermentation at a controlled temperature in stainless steel tanks. Secondary fermentation takes place in the bottle, according to the Metodo Classico, for approximately 40-50 days in the cool underground cellars of Colombo, followed by a lengthy period on the lees for a minimum of 30 months. This is followed by a traditional 'remuage' on 'pupitre' and 'dégorgement à la glace'. Intense straw yellow colour, fine and very persistent perlage. The nose is intense, decisive, deep and of enveloping elegance. Exotic fruits, acacia honey and mineral hints reminiscent of talc and powder. In the mouth, it is well balanced between body and freshness, with an excellent structure. In the mouth, it reveals an interesting savouriness and minerality, thanks also to the soft and non-aggressive dosage. The persistence is excellent. Good as an aperitif, it goes well with a fish menu or main courses of white meat.
