A Metodo Classico of great pleasure. An ‘Enchantment’ of wine. We are talking about Erbaluce di Caluso DOCG Metodo Classico, a fascinating bubbly produced by Cantine Crosio. It is made, as is easy to guess, from pure Erbaluce grapes, cultivated on moraine soils rich in gravelly debris and sand. The vineyards are located 320-340 metres above sea level, where the cool, breezy climate enhances the characteristics of the vine. Erbaluce, an indigenous white grape, is distinguished by its elegance and finesse. Its natural acidity makes it perfect for sparkling wine production, giving it freshness and longevity. In this case, Incanto boasts an ageing on the lees of more than 36 months, which gives the wine complexity and refinement. In the glass, it is a pale, bright straw yellow colour. On the nose, aromas of fresh fern, green apple, pear, citrus and ripe white fruit intertwine with notes of bread crust, almond and slight hints of spice. In the mouth, it is fresh and savoury, with a fine, persistent bubble. Its amplitude and persistence provide a delicately almondy finish that immediately invites you to take another sip. Ideal with fish dishes such as oysters, fish tartare, shellfish, swordfish and fish baked in foil, it also goes well with white meats and risottos.
