Eleven - magnificent - hectares. One of the oldest wine-growing estates in the area. Three hundred years of history and an extraordinary four-hectare vineyard enclosed by 11th-century walls. All this is 1701, the first winery to be entirely converted to biodynamics in Franciacorta. Modern techniques, inspired, however, by a production philosophy linked to the most virtuous traditions. Only biodynamic preparations are used in the vineyard and every process, from the simplest to the most complex, is carried out scrupulously following the different phases of the moon. Synthetic chemicals are banned in the vineyard and in the cellar. The grapes, rigorously hand-picked, ferment according to the rhythms of nature, thanks to "pied de cuve" created with native yeasts. And for the wine's maturation in the bottle, we always go well beyond the minimum prescribed by the strict DOCG production regulations.
