Let us start with the definition of Crémant: a sparkling wine produced in France using the classic method, i.e. with a second fermentation in the bottle. A bit like Champagne, but unlike the latter, Crémant can be produced in several regions, including Alsace, Burgundy, Loire, Champagne and the Rhone Valley. The one proposed here by Maison Péguet, in particular, comes from a blend of 70% Pinot Noir, 20% Chardonnay and 10% Gamay. In the blend, the Pinot Noir gives the wine structure and body, the Chardonnay freshness and finesse, while the Gamay gives fruity and aromatic notes. Harvested by hand, the grapes are collected in perforated boxes. In the cellar, they are gently pressed to extract the must, which is fermented in stainless steel at a controlled temperature. After primary fermentation, the wine is bottled and undergoes a second fermentation in the bottle. Soft pink colour with salmon reflections. The nose is fresh and intense, with hints of red fruits, citrus and fragrant notes. In the mouth it is fresh and creamy, with hints of berries and red fruits. Then pleasant hints of citrus fruits and a persistent, enveloping finish. A particularly elegant wine, it is characterised by easy drinking. It can be served as an aperitif, with hors d'oeuvres, first courses of fish or shellfish, as well as main courses of white meat or vegetable side dishes.
