The Loire Valley, located in the centre of France, is one of the country's most popular wine regions. A wide variety of fresh and fruity wines are produced here, starting with special grape varieties such as Chenin Blanc and Sauvignon Blanc. The one offered here by Domaine Dhommé is a Crémant de Loire Extra Brut, i.e. a classic French sparkling wine produced outside the borders of Champagne. It is composed of 80% Chenin Blanc grapes, plus 20% Chardonnay. Organic production, in line with environmental and health protection. After fermentation in stainless steel, the base wine undergoes 'earth' filtration, using a fossil conglomerate of fine-shelled unicellular algae, ground as finely as flour. After bottling, frothing and subsequent ageing on the lees in the bottle for about 12 months begins. In the glass, it has a brilliant greenish yellow colour with a delicate fine effervescence. On the nose, hints of white flowers, fresh fruit and light citrus hints can be perceived. In the mouth, then, thanks to the dosage of sugar content, the wine is pleasantly fresh and has good persistence. Ideal as an aperitif, it can also accompany a light meal with fish dishes. More generally, its freshness and good persistence make it an ideal companion for simple and delicate dishes.
Drawing on the experience of four generations of the family, Domaine Dhommé is located in the heart of the Anjou region. Today, it is led by Clarisse Dhommé. The cellar was built right in the heart of the vineyard, which extends over some 25 hectares, designed and adapted to reconcile current and traditional techniques with the functional, qualitative and aesthetic criteria of the artisanal character. The soils on which the vineyards stand are of clay-limestone origin, with quartz and layers of brown shale in the immediate subsoil. Convinced supporters of the protection of the environment and health, at the end of the 2000s, the owners decided to convert agricultural dynamics by investing in organic production, obtaining the relevant certification in 2011.
