Today we are in the Loire. It is here that Muscadet Sèvre et Maine sur lie AOC Comte St Hubert, an organic white wine produced by Château du Coing de Saint Fiacre, was born. Melon de Bourgogne is a native Loire grape variety that is perfectly adapted to the region's cool and humid Atlantic climate. Its compact bunches and golden berries produce elegant, mineral and fruity white wines with characteristic aromas of white peach, green apple, citrus and white flowers. Here, the grapes ripen on clay-schist soils with southern and south-western exposure, which enjoy an ideal microclimate. Indeed, sea breezes from the Atlantic and river influences create the perfect environment for slow and even ripening of the grapes, guaranteeing the aromatic concentration and minerality typical of this wine. With full respect for the environment and the terroir, the grapes are harvested by hand and carefully selected to ensure maximum quality. Vinification takes place in underground glass tanks, where the wine macerates in contact with the skins to enhance its structure and minerality. This is followed by spontaneous fermentation on the lees for 14 months to give the wine complexity, elegance and long ageing potential. In the glass it has a brilliant straw yellow colour with golden reflections. The nose reveals floral aromas of acacia and white flowers intertwined with fruity notes of white peach, grapefruit and citrus fruits. In the mouth, it impresses with its elegant and mineral structure, revealing a lively freshness and persistent sapidity. The finish is long and persistent, with echoes of white fruit and delicate spices. An ideal companion for raw fish dishes, shellfish, seafood, oysters and white fish preparations.
