In the heart of the Côte des Bar, specifically in the village of Ville-sur-Arce, Jérôme Coessens produces his Champagne Blanc de Noirs Largillier Brut. This region, located in the southern part of the Champagne region, is characterised by clay and limestone-rich soil, which gives the wines a unique structure and complexity. The term ‘Blanc de Noirs’ indicates a Champagne produced exclusively from black grapes, in this case 100% Pinot Noir. Vinification takes place entirely in steel, with malolactic fermentation carried out in full, a process that softens the acidity and gives roundness to the wine. In the glass, Largillier Brut is bright golden, with a fine and persistent perlage.
