Bonnet-Gilmert, a house in Oger in the Côte des Blancs, specializes in producing Blanc de Blancs Champagnes, that is, made only from white grapes. After all, the Côte des Blancs, thanks to its limestone and chalky soils and its particular location south of the Montagne de Reims, is the promised land of the world's best Chardonnays. In this case the proposed version is Extra Brut, pleasantly dry and vertical, thanks to a definite mineral note typical for the area. In the winery, processing of base wines takes place inside thermoregulated tanks. Part of the bases undergo malolactic fermentation, before blending with part of the reserve wines, again stored in the cellar in thermoregulated vats. For the aging phase, the wine rests in the bottle for between 18 and 24 months, always in contact with its lees. What results is a beautiful glass characterized by a deep yellow color, with fine and persistent perlage. The nose gives intense and immediate fruity scents, while in the mouth it is streamlined, elegant, clean and with vibrant acidity. Finally, the closure is fruity, long and persistent. Perfect for aperitifs, at the table it knows how to accompany (and enhance) fish-based first and second courses.
