Stéphane Regnault, 45 grande rue 51190 Le Mesnil-sur-Oger - Francia
A Champagne that combines elegance, complexity and a strong link with the territory. It is the Blanc de Blancs Grand Cru Chromatique Extra Brut, proposed here by Stéphane Regnault. Born in the Côte des Blancs, this label is a real sensorial journey through one of the most renowned terroirs in the world for Chardonnay. The Côte des Blancs, it's worth remembering, is one of the most iconic areas of the Champagne region, famous for its chalky soils and for the production of high quality white Champagne. Here, the cool climate and the limestone soils create the ideal conditions for growing Chardonnay. Le Mesnil-sur-Oger, in particular, is a village classified as a Grand Cru, known for its mineral, elegant and long-lived wines. The grapes used for this Champagne come from vineyards cultivated without systemic treatments, following the principles of sustainable and environmentally friendly viticulture. Fermentation takes place half in wood and half in steel, a choice that allows the complexity given by the wood to be balanced with the freshness and purity of the steel. The malolactic fermentation, which softens the acidity of the wine, is carried out completely, adding roundness and harmony to the final profile. On the nose, Blanc de Blancs Grand Cru Chromatique Extra Brut is multi-faceted and intoxicating, with notes of fresh citrus fruits, white flowers, toasted almonds and a distinct minerality. In the mouth it is perfectly balanced between ‘chalkiness’ and creaminess. The freshness is vibrant, but well integrated, with a long persistence that leaves the palate enveloped in pleasant and complex sensations. Perfect to accompany fish dishes, such as oysters, crustaceans or shellfish. Its freshness and minerality also make it excellent as an aperitif, ideal for starting a dinner in style.
Today we're travelling with our imagination to the charming region of the Côte des Blancs, the heart of Champagne production. Here we find the winery of Stéphane Regnault, a producer who embodies passion, tradition and innovation. The winery is located in Le Mesnil-sur-Oger, a village renowned for its elegant and mineral wines. Here, Stéphane carefully and diligently manages 1.5 hectares of vineyards, producing around 15,000 bottles a year. Stéphane Regnault is not a traditional winemaker. His story is a journey through diverse professional experiences: from sommelier in London to aerospace engineer in Paris. However, in 2007, he decided to return to his roots, taking over his father's vineyards and transforming them into a cutting-edge company. From the very beginning, he abandoned the use of herbicides and pesticides, embracing a more sustainable viticulture. In 2017, he began the process of obtaining organic certification, which he officially achieved with the 2020 harvest. This commitment to nature is reflected in his wines, which express authenticity and purity. One of the peculiarities of Regnault's method is the use of a ‘perpetual reserve’ in the production of his Champagnes. This technique, which involves adding a small amount of wine from previous years, enriches the aromatic and structural profile, giving the wines exceptional depth and longevity. It is as if each bottle contains not only the essence of a single year, but also the memory of all the seasons that have passed.
