Of Jean-Marc Sélèque's production, this Extra Brut is a bit of a calling card. Here, in fact, Champagne plays everything on a perfect balance that is difficult to achieve, between structure and freshness. Sélèque gets there thanks to a particularly skilful use of jars in the cellar. The bases, in fact, are made 2/3 in steel and part in wood, creating a very pleasant harmony on the palate. To complete the picture, an extremely limited dosage, about 2 grams of sugar per litre, favours the verticality so beloved of Champagne enthusiasts. Sélèque's Solessence Extra Brut is the result of a blend where Chardonnay accounts for 50% of the total mass. With him a generous 40% Pinot Meunier and just a hint of Pinot Noir. The bases are also bottled for the second fermentation, without having undergone any ageing or filtration. A wine that can be defined as 'for friends', that is, to be shared at a nice dinner, the kind that ends very late. The first bottle will probably not even see the first course arrive on the table. This is why the advice is to always keep a small stock on hand.
Vallée de la Marne. One of the renowned areas of Champagne. This is where J-M Sélèque operates. It is located in Pierry, Coteaux Sud d'Epernay, i.e. south of the capital of Champagne. It is a small RM, i.e. a 'Récoltant Manipulant', a winegrower who produces and markets Champagne under his own label, only from grapes from his own vineyards, and processed in his own cellars. Specifically, Sélèque has 9 hectares of property, divided between Chardonnay, 50%, Pinot Meunier, 40%, and Pinot Noir for the remainder. In total, this amounts to a production of around 100,000 bottles, all of which are very enjoyable. The history of the winery began in 1965, when Henri Sélèque planted the first vines. His son, Richard, joined the company only a few years later, in 1974, after graduating in oenology. The other crucial step came in 2008, when Jean-Marc, the founder's grandson, took over the company. He is credited with renewing the style of the house, learning from the past to interpret contemporary taste.
