It is called Échappée Belle and is a Champagne Premier Cru, Extra Brut, proposed here by Etienne Calsac. This pure Blanc de Blancs offers a unique tasting experience. The Chardonnay grapes from which it is made come from a village classified Premier Cru. This is Avize, in the Côte des Blancs, an area renowned for the production of Chardonnay of the highest quality. More specifically, the vineyards from which the grapes used in the production of this Champagne come are characterised by soils rich in clay and limestone, with eastern and north-eastern exposures. This combination of elements creates a perfect microclimate for the ripening of the Chardonnay grapes. The stainless steel vinification and the malolactic fermentation carried out give this Champagne a complex and harmonious aromatic profile. The nose reveals notes of citrus fruits, white-fleshed fruit, white flowers and mineral hints. The taste is fresh and vibrant, with a nice acidity accompanying a lingering, savoury finish. The dosage, Extra Brut, with only 3 grams of sugar per litre, gives a pleasantly dry and fresh sip. A perfect Champagne to accompany aperitifs and fish starters. To best appreciate its liveliness and fruity expression, this Champagne should not rest too long in the cellar before serving.

For this reason, he almost exclusively vinifies the grapes of each parcel in purity, obtaining wines that express the unique characteristics of each terroir. In addition to Chardonnay, Etienne Calsac also cultivates some old grape varieties such as Petit Meslier, which are used to create special cuvées.
