  • Sensations Straw gold colour with very fine perlage. The colour reveals the high percentage of Chardonnay and the exclusive use of the first press. The fine perlage is due to a noble raw material, a perfectly controlled, cool and constant cellar temperature and very long bottle ageing. On the nose, the first aromas reveal the citrus fruits of Chardonnay: lime, grapefruit. Then red fruit aromas appear: currant, raspberry, morello cherry, characteristic of Pinot Noir. When the wine opens in the glass, the slightly candied, even exotic fruit of Pinot Meunier (pineapple) is revealed. In the mouth, the attack is lively thanks to the low dosage that respects the wine's authenticity. The nose is confirmed with initial flavours of citrus fruits, almonds, toasted bread... but also redcurrant jelly and then black fruit such as cherry, fig or blackberry. The palate is broad without being heavy, quite long, with a very clean finish.
  • Vinification The Première Cuvée Extra Brut, Maison Bruno Paillard's signature, is a very personal interpretation of the inter-region. It is the fruit of over 30 crus from the noblest terroirs of Champagne, the composition of which is kept secret. A first-pressing selection of Pinot Meunier (22%), Chardonnay (33%) and Pinot Noir (45%), part of which (20%) undergoes its first fermentation in barrels. To these are added the reserve wines, 25 vintages blended since 1985 in proportions of up to 50%. Maturation in the cellar is long, 3 years on the lees followed by a minimum of 5 months after disgorgement. The dosage, Extra-Brut (less than 6g/L), makes this wine an authentic and pure Champagne.

  • Among the most representative wines of Maison Paillard is undoubtedly this Champagne Extra Brut Première Cuvée, an emblem of style. Made from a skilful blend of Pinot Noir (45%), Chardonnay (33%) and Pinot Meunier (22%) grapes, this Champagne is a tribute to 35 crus, selected in the Champagne region. Chalky soils give the wines an unmistakable mineral freshness and a cool climate, perfect for the slow and complete development of the grapes. The Extra Brut indication, then, immediately makes us think of a wine characterised by a low dosage of sugar (less than 6 grams per litre), ideal for allowing the wine to express its authenticity to the full. Première Cuvée comes from the first pressing of the grapes and also includes a small percentage (around 20%) that ferments in oak barrels, giving the wine complexity and depth. Reserve wines from as many as 25 vintages dating back to 1985 are also added to the blend, enriching the finished wine with unique nuances and a balanced structure. Maturation is long and patient: the wine rests for three years on the lees, acquiring body and a refined texture, and then spends at least another five months in the cellar after disgorgement to complete its maturation. To the eye, Première Cuvée has a brilliant straw gold colour, enhanced by a very fine and persistent perlage, a sign of the quality of the raw materials and careful processing. On the nose, citrus notes of lime and grapefruit, typical of Chardonnay, are followed by red fruit aromas such as currant and raspberry, reminiscent of Pinot Noir. With time, the more exotic and slightly candied hints of Pinot Meunier emerge, with hints of pineapple. In the mouth, it is extremely fresh and lively thanks to the low dosage of sugars. Notes of citrus fruits, almonds and toast return, along with the sweetness of currants and black fruits such as cherry, fig and blackberry. The wine's structure is ample but not heavy, with a long, clean and harmonious finish. Perfect with sushi and sashimi, it also goes well with shellfish, such as lobster and crab, and roast poultry.

Here, roses planted at the edge of the rows act as a vanguard, providing early warning of diseases that could damage the vines. In the cellar, one of the central moments in the creation of Champagnes is the moment when the cuvées are made. During the months between January and Easter, the team works on the blends, using reserve wines that can date back as far as the 1980s. Each bottle then clearly shows the date of disgorgement.
