Ayala's Brut Majeur is an elegant starting point for those who want to discover the world of this fine Maison of A?. 40% Chardonnay, 40% Pinot Noir and the remainder Meunier, each individual parcel is vinified separately so that the Chef de Cave has maximum freedom of choice when creating the cuvée. After soft pressing, the free-run juice is started for fermentation in temperature-controlled stainless steel tanks, and after a refining period of a few months, the base wines are assembled for bottling and the tirage phase.
