  • From vineyards classified Premier Cru in Bisseuil, an area famous for its unique terroir that gives wines of great character and complexity. We are talking about the Brut, Blanc de Noirs, Premier Cru of Gonet-Médeville. 100% Pinot Noir, the vineyard is developed on chalk-rich soil that gives the grapes a distinctive minerality and extraordinary freshness. The harvest is, as is customary in Champagne, carried out manually. Only the best bunches, which have reached the ideal moment of ripeness, are harvested. After harvesting, the grapes undergo a soft pressing in the cellar and the first fermentation takes place 70% in temperature-controlled stainless steel tanks and the remaining 30% in used barriques. This choice allows the producer to best balance freshness and aromatic complexity. Ageing then continues for 30 months in the bottle, where the wine rests on its lees, developing complex aromas. Subsequently, the Champagne undergoes dégorgement, a low dosage and a further resting phase in the cellar for no less than 4 months, waiting to achieve perfect harmony between freshness and depth of flavour. To the eye, it has a beautiful bright straw yellow colour. The nose reveals an intense and multifaceted bouquet, with fruity notes reminiscent of crisp apple, lemon and clementine, enriched by hints of dried fruit and orange blossom. In the mouth, the attack is elegant, with a surprising drinkability supported by a vibrant minerality. The finish is long and decisive, with an energetic grip and a savouriness that entices one to take another sip. Versatile in pairing, it is ideal with seafood, oysters and shellfish. It can also be paired with fresh, delicate cheeses or, for a gourmet combination, with citrus risotto.

    Located in the heart of Champagne, Maison Gonet-Médeville was founded in 2000, thanks to the passion and vision of Xavier Gonet and his wife Julie Médeville. In spite of the company's young age, the couple has been able to capitalise on a winemaking heritage with a long tradition, creating Champagnes that are already internationally recognised and appreciated. The estate covers 12 hectares, spread over six communes, three of which are Grand Cru - Les Mesnil-sur-Oger, Oger and Ambonnay - and three classified as Premier Cru: Bisseuil, Mareuil-sur-Ay and Trépail. As a Récoltant-Manipulant, the company manages the entire production process, from growing the grapes to bottling, guaranteeing absolute control over the quality of the wines produced, expressing the peculiarities of the individual villages in the best possible way. The Maison's style is clean and precise, with taut, lively wines that are ideal representatives of modern Champagne.
