The pleasure of discovery also comes through encounters with bottles like this one. Cuvée Néon Brut from Alain Mercier is a pure Pinot Meunier. A Blanc de Noir, then, made from the other Pinot, the lesser-known Pinot Noir but also less capricious and still capable of producing wines of great pleasure. This, in particular, is Mercier's flagship wine, what is generally considered the most effective calling card to illustrate the style of the house. In the glass, this Néon has a reassuring light golden color. The nose reveals itself to be fine, characterized by tones of white, slightly candied fruit, such as apple and pear, accompanied by notes of honey. In the glass, after being in contact with oxygen for a few minutes, aromas of pastry and roasted hazelnuts are revealed. In the mouth it is blunt, perfectly balanced between roundness and vivacity. A pleasantly gastronomic wine, it goes well with seafood, shellfish and coquillage. But if instead of fish, a meaty main course is served, the makings of the best accompaniment are certainly not lacking.
