    • A sip of history, a toast to tradition: this is how we could summarise the essence of this Champagne Blanc de Noirs, from the Vallée de la Marne. This is considered the cradle of Champagne. A unique territory, characterised by rolling hills, steep vineyards and a cool, humid climate. The soil, rich in limestone and clay, gives the wines a distinctive minerality and an unrivalled aromatic complexity. In this context, the vineyards of Le Guédard, located in the village of Cumières, benefit from a privileged exposure and an ideal microclimate for the cultivation of Pinot Noir and Pinot Meunier grapes. A Blanc de Noirs, this Champagne is produced with Pinot Noir (60%) and Pinot Meunier (40%) grapes, two black grape varieties that give the wine structure, intensity and complexity. Pinot Noir, in particular, is known for its aromas of ripe red fruit and spices, while Pinot Meunier brings fruity and floral notes. Le Guédard follows an artisanal production method, which involves harvesting the grapes by hand, pressing them gently with an old wooden press and fermenting them in steel tanks. The wine is then aged on the lees for a long period, during which it develops its characteristic notes of toast and brioche. Remuage, or the manual rotation of the bottles to allow the yeast to settle in the neck, is another fundamental stage of the production process. Finally, the wine is disgorged and corked without adding sugar (Brut Nature), to enhance the purity and freshness of the fruit. Les Vignes de Mon Grand-Père has an intense straw yellow colour and a fine, persistent perlage. On the nose, there are aromas of ripe fruit such as apple, pear and peach, citrus fruits such as grapefruit and citron, white flowers and spices. On the palate, it is dry, fresh and mineral, with a pleasant hint of iodine and a persistent finish. Excellent as an aperitif, it also goes well with fish, shellfish, white meat and fresh cheese.
