  • If the Montagne de Reims is recognised as being one of the best areas in Champagne for the production of Pinot Noir grapes, this label from Maison Tornay can only be a small masterpiece. 100% Pinot Noir, this Champagne bears the label Blanc de Noirs, which precisely means that it is a white sparkling wine, produced however from the vinification of only red grapes. Specifically, grapes from the village of Bouzy and classified as Grand Cru. Vinification of the base takes place in thermoregulated stainless steel vats. Then, once the cuvée has been made up, the wine is bottled to begin the classic method frothing phase. This is followed by maturation on the lees for a minimum of 6 years and, after disgorgement, a dosage of approximately 8 grams of sugar per litre. In the glass, this Champagne reveals a beautiful effervescence, with bubbles of great finesse. The colour is pale gold, clear and brilliant. The nose reveals a mature wine, with aromas of white-fleshed fruit, notes of honey and gingerbread. In the finish, a touch of quince. In the mouth, a round wine is revealed, with a pleasant freshness in the background. Notes of candied fruit and a slight bitter note on the finish. To accompany it worthily, this Champagne requires dishes with a strong flavour, such as foie gras or savoury pastries. It is also perfect with a good roast veal with mushrooms.

Classified as a Grand Cru, the village of Bouzy is renowned not only for its famous bubbly wine, but also for the quality of its red wines. Today, the estate is run with passion and expertise by Nathalie Tornay, together with Rudy Hutasse. Today, the estate has a vineyard of around 21 hectares, spread over the most prestigious crus in Champagne.
