Let us start with two essential facts. This Terroirs Grand Cru Champagne respects the Blanc de Blancs appellation. This unequivocally indicates that this is a 100% Chardonnay. The Brut specification, on the other hand, indicates that it is a rather dry sparkling wine with a decidedly moderate sugar content. A fresh and mineral Champagne, the grapes from which it is made come from three villages classified as Grand Cru: Cramant, home of the Bonnaire company, Chouilly and Oiry. The vinification of the base wines takes place in thermo-conditioned stainless steel tanks and, particularity, the wines undergo what is known as malolactic fermentation, which slightly reduces the sensation of freshness, making, however, the wine more complex and deeper. After bottling, the Champagne rests in the cellar for no less than 36 months, first undergoing what is known as mousse-taking and then being enriched by prolonged contact with the lees. Pale bright gold, this BdB has pleasant and intense scents at the same time. Notes of candied fruit, lime and orange peel. Then bread crust, pastry and a roasted hazelnut finish. In the mouth, despite the malolactic fermentation and the long stay on the lees, it is still possible to be surprised by the pleasant mineral acidity. A pleasantly gastronomic champagne, it is perfect as an aperitif, but also with seafood and sushi.

In the early 1930s, Fernand Bouquemont, great-grandfather of the current owners, decided to start making wines from his own vineyards. And, fortunately, good results were not long in coming. Today the company is run by the fourth generation of the family and can count on nearly 22 hectares of vineyards from which they obtain about 100 thousand bottles each year.
