The one proposed here by Maison Brimoncourt is a Champagne of great value. Made from grapes from villages classified as Grand Cru, it is a pleasantly dry Champagne, thanks to an extremely limited dosage (Extra Brut). Its cuvée is mainly made from Pinot Noir grapes, about 80%, and Chardonnay for the remainder. A wine with an elegant and complex taste, the first alcoholic fermentation takes place in stainless steel vats. Once the right blend has been created, the wine is bottled for the next stage of frothing in the bottle and the subsequent period of maturation in contact with the yeasts. It waits patiently for a good 6 years before disgorging and dosage of just 2 grams of sugar per litre. In the glass, Maison Brimoncourt's Champagne Grand Cru Extra Brut reveals a brilliant colour with green hues and a slight trickle of fine bubbles. On the nose, it offers a complex bouquet, with hints of sweet fruit, such as nectarine, dried fruit and ginger. The palate is broad and fresh, with well-defined hints of pink grapefruit. The finish is elegant and delicate. Best drunk within 3 years of disgorgement, it pairs well with fish dishes. Excellent, for example, with baked turbot, but also with prawns and shellfish.
