Not only does it come from vines that are on average over 50 years old. But it is also an environmentally friendly product, from an organic vineyard, where biodynamic techniques are also practised. In the cellar, however, the producer uses only natural yeasts for the primary fermentation, which takes place in enamel-lined steel tanks, painted in bright and cheerful colours (just to give the cellar some life). The Cuvée is the result of a blending of reserve wines and is matured on the lees for over 3 years. A lively and concentrated Champagne, it evokes the sweet aromas of berries, biscuit and a fascinating mineral note. An elegant and refined Blanc de Noirs, perfect as an aperitif or throughout the meal. It goes well with fish and shellfish or, if desired, with delicate white meat dishes.
Small producer, great wines. This, in a nutshell, is the story of Pierre Brigandat. A still short story, to tell the truth, since his first Champagne was only marketed in 1993. All thanks to a plot, long owned by his family, of just over 8 hectares. We are in the Côte des Bar area. Until then, in fact, the Brigandat family sold its grapes to large houses and négociants. Trying their hand at transformation was undoubtedly the right choice, considering their current small production of high quality wines. The small Maison's Champagnes, all processed strictly in steel, are always characterised by the same stylistic signature. Precise and appreciable. Organic wines, biodynamic farming practices are also used in the countryside. In the cellar, on the other hand, only natural yeasts and medium/long bottle ageing are used.
