An important Champagne, the product of long processing and a very long ageing on the lees. We are talking about Champagne Réserve Cuvée Aristide Extra Brut Millésimé by Jean-Bernard Bourgeois. A refined expression of the terroir of Courmas, a small village in the Montagne de Reims, in the heart of Champagne, the vineyards here are characterised by limestone-clay soils that offer excellent drainage and a unique ability to reflect sunlight towards the vines. All this favours the complete ripening of the grapes and the production of wines of great character. Cuvée Aristide is a blend of equal parts Pinot Noir and Chardonnay, a perfect balance of structure and finesse. After bottling and frothing, this Champagne matures on the lees for an impressive 90 months, i.e. 7½ years. During this long maturation, hints of bread crust, dried fruit and a mineral touch reminiscent of the terroir emerge. On tasting, this Champagne stands out for its marked savouriness, combined with a subtle mineral note and delicate texture. The nose is refined, with aromas of ripe citrus fruits, toasted almonds and a slight hint of flint. In the mouth, the freshness perfectly balances the structure, making this wine an ideal companion for a complete meal. It pairs well with baked fish dishes, shellfish, white meats and mature cheeses. Excellent with creamy risottos or truffle dishes.
Champagne Jean-Bernard Bourgeois represents an important family heritage in the heart of the Montagne de Reims. For over two centuries, in fact, the Bourgeois family has cultivated a passion for wine-growing. The first records date back to the 18th century, with Eugène Aristide, vigneron in Jouy-lès-Reims. Then in 1963, the company took shape, thanks to the commitment of Irénée and Jean-Bernard Bourgeois, who planted new vineyards in Courmas, joining the local cooperative. Today, the Maison's vineyards extend over exceptional land, classified Premier Cru, in Jouy-lès-Reims and Coulommes-la-Montagne. In Courmas, in particular, the very rich, clayey soils are ideal for growing Meunier, which is the predominant grape variety on the estate. Always mindful of sustainability, Jérôme et Céline Bourgeois, the fourth generation in the cellar, have adopted environmentally friendly farming practices. By reducing the use of chemical products, favouring organic farming and making the most of the by-products of wine-making, they contribute to preserving biodiversity and limiting the environmental impact of production.
