  • For those who do not like extremely dry wines, a Brut like this is the right compromise. With a dosage of less than 10 grams of sugar per litre, in fact, this Champagne proves particularly versatile. Fresh, fruity and mineral, it can be served on a thousand occasions. Champagne Boivin 1er Cru "Cuvèe Icone" is made from Pinot Meunier grapes for the vast majority, about 80%, and Chardonnay for the remainder. All grapes come from vineyards classified as Premier Cru located in the Vallée de la Marne. The grapes are harvested by hand and vinified according to the traditional method. After alcoholic fermentation, the wine is bottled and undergoes a second fermentation in the bottle. This delicate phase lasts a full 36 months. In the glass, one thus discovers a wine characterised by a beautiful, bright straw yellow colour with greenish highlights. The nose is fresh and fruity, with notes of white fruit, such as apple and pear, and yellow fruit, such as peach. Then citrus fruits and pastries, with clear hints of fruit tart and brioche. In the mouth, it is round and velvety, with a good structure and persistent freshness. The finish is long, with hints of white fruit, dried fruit and citrus fruits. Perfect to accompany aperitifs, but also fish and shellfish dinners, white meats and cheeses.
