Let us immerse ourselves in the heart of Champagne, in Courmas, a small treasure hidden in the Montagne de Reims. This is the birthplace of Jean-Bernard Bourgeois' Champagne Dosage Zéro, a wine that expresses the essence of terroir. Jean-Bernard Bourgeois' vineyards are located on limestone-clay soils, an ideal terroir that gives the wines an extraordinary minerality and complexity. This particular soil composition, combined with the region's cool and humid climate, creates ideal conditions for the cultivation of Chardonnay and Pinot Noir, which contribute equally to the composition of this wine. Champagne matures for an impressive 120 months on the lees. This long bottle-ageing allows it to develop complex aromas and acquire a solid structure. The absence of dosage, i.e. the addition of liqueur d'expédition, enhances the purity of the fruit and minerality. To the eye, it has a brilliant straw yellow colour with a fine and persistent perlage. On the nose, it reveals a complex and enveloping bouquet, with notes of white-fleshed fruit, citrus fruits, brioche and spices. In the mouth, it is characterised by excellent structure, lively freshness and pronounced minerality. The finish is long and persistent, with notes of honey and toast. Dosage Zéro is a wine with great ageing potential. Capable of evolving positively for at least 10 years, it will develop even more complex aromas and tertiary nuances with the passage of time. For more than two centuries, in fact, the Bourgeois family has cultivated a passion for wine-growing. The first records date back to the 18th century, with Eugène Aristide, vigneron in Jouy-lès-Reims. Then in 1963, the company took shape, thanks to the commitment of Irénée and Jean-Bernard Bourgeois, who planted new vineyards in Courmas, joining the local cooperative. Today, the Maison's vineyards extend over exceptional land, classified Premier Cru, in Jouy-lès-Reims and Coulommes-la-Montagne. In Courmas, in particular, the very rich, clayey soils are ideal for growing Meunier, which is the predominant grape variety on the estate. Always mindful of sustainability, Jérôme et Céline Bourgeois, the fourth generation in the cellar, have adopted environmentally friendly farming practices. By reducing the use of chemical products, favouring organic farming and making the most of the by-products of wine-making, they contribute to preserving biodiversity and limiting the environmental impact of production.
