Disgorged in November 2017 with five grams per liter dosage, the 2007 Dom Ruinart Blanc de Blancs opens in the glass with a lively bouquet of citrus oil, warm bread, green apple and oyster shell, linden and beeswax. On the palate, it's medium to full-bodied, taut and chiseled, with a taut and concentrated core, racy acids and a long, chalky finish.
A lot to like here with a fresh array of mandarins, grapefruit and oranges. Super fresh, ripe and vibrant, there’s plenty of toast and minerals, too. The palate is built in a very supple, attractive and powerful style, holding concentrated, fleshy fruit throughout. Has plenty of time ahead. Drink or hold.

The chalk quarries dug underneath the city of Reims and used for centuries to protect the evolving wines, allowing them to remain in an ideal environment in terms of temperature, humidity, darkness but above all silence. In this great Champagne chardonnay literally explodes in all its aromatic richness. Thus one discovers a wine characterized by a beautiful straw yellow color of extreme vivacity, where millions of fine bubbles rise from the bottom of the glass in uninterrupted chains. On the nose it is elegant and exuberant. Fruity, citrusy and with notes of white flowers. Then more yeast, pastry and custard. on the palate, however, it is fresh and elegant. The same sensations perceived previously return, completed, however, by toasted aromas typical of the Dom Ruinart style. It is no coincidence that this is the Blanc de blancs the emblem of the house.
The history of Champagne revolves around the figure of two legendary Doms.
