      Champagne Barons de Rothschild Blanc de Blancs
    • Barons de Rothschild, Champagne Blanc de Blancs is a magnificent interpretation of the Chardonnay grapes of the Champagne region. Alcoholic fermentation takes place in small stainless steel vats at a controlled temperature, followed by malolactic fermentation, used in this case to give the wine a more complex character. This is followed by a long ageing on its fine lees lasting 6 to 7 months. Refermentation and maturation in the bottle continue for over 3 years, followed by disgorgement and a low but not extreme dosage, with 6 grams of sugar per litre. To the eye, Barons de Rothschild Champagne Blanc de Blancs is crystal clear, with a fine and delicate perlage. On the nose, it offers immediate intensity, with an exotic character. It opens with citrus and dried fruit notes, later revealing hints of brioche and butter, pastry notes and toasted almonds. In the mouth, it is clean and fresh, with notes of fresh citrus fruits. The finish, in this case, is slightly saline. And this very characteristic makes Champagne a perfect companion for seafood and fish dishes.
