It is called Consulat Palace and is a Champagne Brut Prestige presented by Maison Baron-Fuenté. We are, in this case, in the presence of a simple but elegant bubble, elaborated largely from Pinot Meunier, the most representative variety of the Marne region of Champagne. In this case Meunier weighs about 70 percent of the total to which 30 percent Chardonnay is added. Super soft and careful vinification of the base wines, after the first transformation the wines are bottled with their yeasts to begin the delicate phase of frothing. They rest in the cellar for about 2 years before being disgorged and dosed with an addition of 8 grams of sugar per liter. What results is a Champagne characterized by a beautiful bright straw yellow color, with lively bubbles that form a beautiful, uninterrupted perlage. On the nose, the scent is both discreet and elegant, with hints of brioche, confit fruit and a touch of honey. In the mouth, however, it reveals a smooth and balanced wine, perfect as an aperitif or to accompany a refined all-fish menu.
