When you think of Maison Philipponnat, you inevitably end up imagining a bottle of this Cuvée Royale Réserve Brut, which probably represents the best expression of the Maison. An important and prized Champagne, it is made from grapes of which about two thirds come from vineyards classified Grand Cru and Premier Cru in the villages of Ay and Mareuil-sur-Ay. A particularity concerns the use of reserve wines, those jealously preserved in the cellar to be used in the blending of new sparkling wines. In this case, the assembly of the Cuvée Royale Réserve foresees the use of about 20-30% of wines preserved according to the tradition of the Maison in wooden barrels using the Solera method. This, together with the slow maturation of three years on the lees before dégorgement, ensures that the wine is complex and profound. The dosage, as indicated on the label, is Brut, with about 8 grams of sugar per litre. This makes this Champagne an extremely versatile wine suitable for a thousand occasions. Perfect with classic fish, it has enough substance and character to also stand up to a pairing with meat dishes, such as roast veal or rabbit with herbs. In the glass it is a lovely bright golden yellow colour with amber highlights. The nose reveals clear hints of aromatic herbs, such as lime and thyme, as well as brioche and hazelnut. With the passing of the seconds, then a clear reference to citrus and honey emerges. On the palate, however, one discovers a wine with good body and balanced freshness. The finish is long and mineral. Decidedly pleasant.
Just under five centuries. This is the period of time in which the Philipponnat family has been producing great bubbly wines. It was 1522 to be precise. From generation to generation, passing on the typical regional know-how inherited from their predecessors, Maison Philipponnat continues to respect the oldest traditional values. The winery is located in Mareuil-sur-Ay, a village classified Premier Cru in the Vallée de la Marne region, east of Epernay and on the border of the Côte des Blancs. Here Philipponnat can count on over twenty hectares of its own vineyards, planted almost entirely with pinot noir. In addition to Mareuil-sur-Ay, Philipponnat's vineyards are located in Mutigny, Avenay-Val-d'Or and Ay, the latter even being classified as a Grand Cru. Of all the plots, the House has a monopoly on the famous "Clos des Goisses", an exceptional vineyard of just over five hectares, where the particularly steep slopes, the total southern exposure and the very chalky subsoil give rise to Champagne with great minerality and freshness. In 1997 the Maison became part of the BCC group and since 2000 it has been personally managed by Charles Philipponnat. In the cellar, in keeping with the Maison's tradition, the Solera ageing method is still used for the reserve wines. These, after maturing in oak barrels, are added to the cuvées developed for non-vintage Champagnes. This practice lends complexity to the wines produced and symbolically allows a small percentage of all the vintages assembled since the company's origins to be added to each new release.
