    • We are in the heart of the Côte des Bar, and more precisely in the village of Ville-sur-Arce. Here the Coessens family passionately manages their vineyards. We are in the southern part of the Champagne region, an area characterised by Jurassic slopes resting on a substratum of Kimmeridgian limestone. This clay-rich soil composition gives the wines remarkable power and depth, balanced by lively acidity and a richness of fruit. Here Pinot Noir accounts for over 86% of the region's vineyards. The indication ‘Blanc de Noirs’ indicates a Champagne produced exclusively from black grapes, in this case 100% Pinot Noir. Whereas the term ‘Nature’ refers to a zero dosage, i.e. without the addition of sugars after the second fermentation, thus expressing the purest essence of the grape variety and the terroir. To obtain a balanced Brut Nature, it is essential to select grapes from vintages with considerable richness and moderate acidity. The grapes are harvested by hand when fully ripe, to ensure maximum aromatic expression. Alcoholic fermentation takes place in stainless steel tanks to preserve the purity of the fruit, followed by malolactic fermentation, which softens the acidity and gives the wine greater roundness. Bright golden colour and fine, persistent perlage, the nose reveals rich, warm aromas, with notes of ripe red fruit such as raspberries and currants, accompanied by vinous and crisp sensations. A refreshing touch of ginger adds complexity and vivacity to the aromatic bouquet. On the palate, the wine is pleasantly drinkable, with a balanced structure and a freshness that invites you to take another sip. The minerality of the terroir is reflected in a subtle flavour, while the ripeness of the fruit gives depth and persistence to the finish. Largillier Nature is an extremely versatile Champagne, perfect as an aperitif, and goes well with fish-based appetisers or fresh cheeses. It is ideal with fish dishes, such as fried prawns or vegetable tempura.

Jérôme Coessens' philosophy is to unite tradition and innovation, respect for the environment and the search for quality. His is a precision viticulture, based on integrated pest management and grassing of the soil, to preserve biodiversity and ensure the maximum expression of the terroir. The harvest is carried out manually, with a careful selection of the bunches, and the vinification takes place naturally, without the addition of external yeasts, to enhance the unique characteristics of each vintage.
