In Ville-sur-Arce, in the heart of the Aube region, there is a little gem of French enology: the winery of Jérôme Coessens. A business that, although rooted in a family tradition spanning five generations, has been able to renew itself with a contemporary spirit, focussing on the promotion of a unique terroir and a grape variety of excellence: Pinot Noir. Jérôme Coessens' story is one of a return to his roots, a desire to rediscover his connection with the land and his own origins. After years of experience working for a large Champagne group, in 2006 Jérôme decided to found his own Maison, with a precise idea in mind: to produce champagnes that are the most authentic expression of the Ville-sur-Arce region. Jérôme Coessens' philosophy is to unite tradition and innovation, respect for the environment and the search for quality. His is a precision viticulture, based on integrated pest management and grassing of the soil, to preserve biodiversity and ensure the maximum expression of the terroir. The harvest is carried out manually, with careful selection of the bunches, and the vinification takes place naturally, without the addition of external yeasts, to enhance the unique characteristics of each vintage.
